Tuscan Chickpea Flatbread
Ingredients
- 2½ cups chickpea flour
- 1¼ cups water
- 3 tbsp olive oil
- chives
- black pepper
- salt
Method
- In a bowl, whisk together the chickpea flour and salt. Add the water a little at a time to prevent clumps.
- Mix in the olive oil, cover with plastic, and let rest for at least 3 hours.
- After three hours, preheat the oven to 400℉/200℃ and place a cast iron skillet in the oven to warm up. Or prepare a thin metal pan with parchment paper.
- Chop the chives for sprinkling.
- Carefully remove the heated pan from the oven and coat it with a generous amount of olive oil.
- Quickly pour a thin layer of batter into the pan and sprinkle with chives. You'll probably have enough batter for at least two.
- Bake for 20 minutes until the top is golden and crispy.
- Carefully cut into triangles and finish with freshly grated black pepper.
Cecina
Ingredienti
- 600 ml farina di ceci
- 180 g acqua
- 40 ml olio d'oliva
- erba cipollina
- pepe
- sale
Procedimento
