Recipe for

Roasted Brussels Sprouts with Crispy Chickpeas

From the kitchen ofAmie Serves4–6

Ingredients

  • Brussels sprouts (about 1 ½ lb / 700 g)
  • cooked chickpeas (about 1 ¾ cups / 300 g)
  • Dressing
  • 3 anchovies
  • 1 clove garlic
  • 1 egg yolk
  • 1 tbsp lemon juice
  • ½ tsp Dijon mustard
  • ½ cup olive oil
  • 3 tbsp parmigiano
  • salt & pepper

Method

  1. Preheat the oven to 425°F (220°C).
  2. Spread the chickpeas evenly on a baking sheet, drizzle with olive oil, and season with salt and pepper. Place on the top rack closest to the heat.
  3. While the chickpeas toast, cut the Brussels sprouts in halves or quarters. Spread them on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  4. When the chickpeas are toasted and crunchy, take them out to cool.
  5. Put the Brussels sprouts on the second rack, close but not too close to the heat, so they get a little crispy.
  6. For the dressing, blend the anchovies, garlic, egg yolk, lemon juice, mustard, olive oil, and parmigiano in a food processor until smooth.
  7. After about 25 minutes, or when crispy, take out the sprouts. Sprinkle with the chickpeas, drizzle generously with dressing, and serve right away.
