Roasted Pumpkin Salad with Feta & Pomegranate

From the kitchen ofAmie Serves4

I liked this one so much I made it twice in one week. Sweet roasted pumpkin, salty feta, crunchy walnuts, and little pops of pomegranate. Enough for 4 as a side or 2 as a big lunch.

Ingredients

  • 1 small pumpkin or butternut squash (about 2 lb), peeled and cut into ¾-inch cubes (about 4 cups)
  • 2 tbsp olive oil
  • ½ tsp salt and a few cracks of black pepper
  • 1 bag (5 oz) baby arugula
  • ½ cup crumbled feta, or as much as you like
  • ½ cup walnuts, chopped
  • seeds from ½ pomegranate (about ½ cup)
  • ¼ cup pumpkin seeds
  • Dressing
  • 3 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp honey
  • juice of ½ lemon
  • ¼ tsp salt and a pinch of pepper

Method

  1. Heat the oven to 400°F. Line a baking sheet with parchment.
  2. Toss the pumpkin cubes on the sheet with the olive oil, salt, and pepper. Spread them out in one layer so they roast instead of steam.
  3. Roast for 25 to 30 minutes, flipping them halfway, until they're golden brown at the edges and a fork slides right in. Let them cool for about 10 minutes so they don't wilt the arugula.
  4. Spread the arugula on a big platter and scatter the pumpkin over it. Sprinkle on the feta (as much as you like) and the chopped walnuts.
  5. Make the dressing in a jar: add the olive oil, balsamic, honey, lemon juice, salt, and pepper, put the lid on, and shake it until the honey dissolves.
  6. Drizzle the dressing over the salad. Finish with the pomegranate seeds and pumpkin seeds. Enjoy!
