Recipe for

Chocolate Pumpkin Pie

From the kitchen ofAmie Serves

I found this recipe on Vegan Richa. She makes a ton of vegan dishes that look so yummy, and I encourage you to check it out. I made mine a little differently, using tapioca flour instead of cornstarch, and I made my own pumpkin purée and almond flour. I used milk chocolate since that's what I had at home. To make this 100% vegan, make sure you buy vegan chocolate.

Ingredients

  • Pie
  • 1 small pumpkin (2 cups pumpkin purée)
  • ¼ cup coconut milk
  • 1 ½ tbsp tapioca flour
  • ¼ cup coconut sugar
  • ¾ tsp cinnamon
  • ¼ tsp fresh grated ginger
  • ¼ tsp clove
  • ¼ tsp nutmeg
  • ½ cup dark chocolate
  • ½ cup semi-sweet chocolate
  • 1 tsp vanilla
  • Crust
  • 2 cups almonds
  • 1 ½ tbsp ground flaxseed
  • 3 tbsp water
  • 1 tbsp maple syrup
  • 2 tsp olive oil
  • ½ tsp vinegar
  • 2 tbsp coconut sugar
  • ⅓ tsp salt
  • ⅓ tsp cinnamon
  • ⅛ tsp fresh grated ginger
  • ⅛ tsp clove
  • ⅛ tsp nutmeg

Method

  1. Preheat the oven to 400℉/200℃.
  2. Cut the pumpkin in half, remove the seeds, and place it face down in the oven with 2 cups of water to steam.
  3. Remove when the flesh is soft, about 30–40 minutes. Let cool.
  4. Lower the oven to 330℉/165℃ for the crust.
  5. Blend the almonds in a food processor.
  6. In a bowl, whisk the blended almonds, coconut sugar, and salt.
  7. In a small bowl, mix the ground flaxseed, water, maple syrup, vinegar, and spices. Let sit for at least 2 minutes.
  8. Combine the wet mixture with the dry almond flour mixture and knead for at least 2 minutes into a ball of dough.
  9. Line a pie dish with parchment paper and press the dough into the dish.
  10. Bake for 20–22 minutes.
  11. Scoop the pumpkin into the food processor and blend into a purée.
  12. In a pan over medium-low heat, combine 2 cups pumpkin purée, coconut milk, and tapioca flour.
  13. Mix in the sugar and spices and cook for 5 minutes.
  14. Turn off the heat and immediately fold in the chocolate until evenly mixed, then add the vanilla.
  15. Pour the filling into the pre-baked crust and refrigerate for 2–4 hours.
